The Duchess of Burgundy is a red brown of West Flanders, matured in oak casks and is brewed according to an ancient method that is geographically linked with the southwest of the province of West Flanders. It is a sweet-fruity ale with a pleasant fresh aftertaste. This ale is brewed with roasted malts and with hops with a low bitterness. After the main fermentation, the Duchesse matures further for many months in oak casks.

Willie Smith’s Organic Cider takes its inspiration from the traditional cider making techniques of Northern France. Light and refreshing acidity married with rounded warm apple flavours and a notable tannin structure create a perfectly balanced palate and a easy cleansing finish. The aroma holds red apple, toasty oak and fresh citrus; flavours that are mirrored on the palate. Overall the cider has bags of complexity and structure allowing it to be engaging and yet worthy of great contemplation.

The Island 1842 is an Imperial IPA designed for those who prefer a bold and powerful drink. Our goal with this beer was to coax out and showcase every nuance that our outsized malt and hop bill had to offer. This beer’s hop character is potent with additions in the first wort, constantly through the boil, at flameout and then generously during fermentation. In order to balance the strong hop profile, we built an appropriately robust malt backbone. The moment you pour Island 1842 into your snifter, expect a powerful nose of spicy, floral and zesty hops. The complexity of flavor will then continue to unfold with each sip and the flavor will linger on the palate.
Very Jeng, More Jeng, Jeng AF.
If, like us, you enjoy the flavor profile of a well-made rye whiskey, then you will enjoy this oak infused rye ale. We use generous amounts of rye malts to give it a spicy, peppery edge, and balance it with a blend of caramel and pale malts. We then infuse and mature the beer with new American medium toasted oak. We like drinking this one neat, or with a citrus peel (orange and grapefruit work well) and a dash of bitters.
